Malaysian inspired Tofu Stir fry.

I am Anuradha Bose. Food is a matter of passion for me. But I am not a chef. I just love to cook and bake. And I come from a long line of women , for whom the kitchen is the heart of the home .

During week days, I am alone at home in the afternoons. So lunch is not something I look forward to. But I have to eat something. This Tofu is a quick fix and appeals to all the corners of my taste buds.

 Serves :2

Ingredients:

Sliced fried tofu: 2 cups

Sliced  green cabbage : 1 cup
Sliced green bell pepper : 1 cup
Sliced onion : 1/3 cup
minced garlic : 2 large cloves
vegetable oil: 1/3 cup
salt : according to taste
Sambal oelek paste : 4 tbs
green onions and lime for garnish.

                                     Method:

1) heat the oil in a pan over medium heat and add the onion , garlic and a bit of salt.  Saute for a couple of minutes.

2) Add the tofu a bit more salt and the sambal paste.

3) Mix well and saute for 2-3 minutes.

4) Next add the cabbage followed by the bell pepper and another pinch or two of salt.

5) Mix well and saute for 3-4 minutes. Then take it off the heat.

6) For serving, put some white rice in a bowl and then put some stir fry on top of the rice.

7) Garnish with chopped green onions and lime. Its time to eat.

The secret ingredient for any dish is always love. No need to measure it. The more you add, the better it will taste.
